How can I eat the Cured Marinated Goat Ribs?

  • Preparation for Cooking: Before cooking, soak the goat ribs in cold water for 2-3 hours to reduce excess salt and facilitate cooking. Change the water once during soaking for best results.
  • Slow Cooking: Cook the rib in a large pot with sufficient water on low heat for 2-3 hours. Adding vegetables such as potatoes, carrots and onions can enhance the flavour. Slow cooking allows the flavours to blend and the meat to become tender.
  • Ideal accompaniments: Serve the marinated goat ribs with traditional sides such as cachelos (boiled potatoes), chickpeas, roasted peppers or a fresh salad to balance the robust flavour of the sausage.
