It all starts with the breeding and careful selection of our pigs from the region of Castilla y León, choosing the most noble parts. Then comes the salting process, carried out in a specific way for each of the pieces, and always with the same motto: to reinforce the authenticity and flavor of our products, without ever masking them. However, it is not the seasonings or spices that will finish refining it, but patience. Patience for our product to rest, patience for the salt nuances to be distributed harmoniously and patience for the product to dry out acquiring different notes and aromas. And, of course, with the priceless presence of the smoking in oak wood, so typical of the tradition of Embutidos Ezequiel.
