Thanks to this careful process, full of attention and respect for tradition, this product is protected by the Regulatory Council of the Protected Geographical Indication "Cecina de León".
The raw material is fundamental for the essence of our Cecina. We always select first quality adult meats. Each piece is subjected to a salting phase determined by our masters, followed by a delicate desalting stage. In this way, only the necessary salt is added to the sausage.
However, obtaining the best cecina is a question of patience. That is why the journey of the cecina of Embutidos Ezequiel does not stop here. Each of the pieces must be decanted to obtain a uniform flavor. Then, it is subjected to a traditional smoking process with oak wood, which gives it our characteristic aromas and flavors. Finally, the piece must mature in our cellars. This is the only way for our product to achieve maximum excellence.
